Quick, easy, healthy & yummy lunches – I know I’m in need of these right now! I don’t know about y’all but I’ve been in a major slump with eating healthy meals lately. I’ve been in one of those moods where nothing really sounds good. So I’ve been trying to get re-inspired by yummy, healthy meals. This post is actually one I originally posted in 2018 but had to bring it back up so that I could recreate these! If I needed these I thought you guys might love seeing it again too! Hope you like it!

Over the past year doing the Faster Way to Fat Loss I’ve really gotten good at having different, easy things to keep on hand to whip up a super quick healthy lunches! I’m all about the healthy options that don’t get boring, and finding things that mix up easily has been a lifesaver for me!

AND if you’re doing the Faster Way to Fat Loss there are super easy ways you can swap out fats and carbs in a lot of these recipes which is awesome! For low carb days, add the fats and remove the carbs and vice versa for your regular macro days. So let’s get to it!

Avocado Egg Salad:

This is a super easy toss together dish that is one of my favorites! I do 3 hard boiled eggs (on regular macro days I do 1 full egg and just the whites of the other 2 – on low carb days you can do the yolks of all 3 if you like the yolk) and half an avocado. Chop up and toss in a bowl together. I season with salt, pepper and the everything but the bagel seasoning from Trader Joe’s. I also just recently picked up this green goddess salad dressing also from Trader Joe’s and was a yummy little topping to it! The dressing isn’t a necessary step though. I also recently found these crispbread crackers from Trader Joe’s. It seems everyone is raging about GG Crackers these days and I think these are similar. They’re super low carb as well so you can fit these in on most days with the FWTFL! They’re a great low carb, but it feels like a carb, option which is great!

Bagged Salad Topped with Grilled Chicken:

Bagged Salad is one of my go-to’s because I love salads but suck at making them! Ha! I love that these are perfectly portioned out with some extras in there like nuts, cheese and other yummy additions that I don’t always have at home. They’re great because you can make the whole thing or you can make half and save half for later, etc. They’re just super easy! I’ll grab a few of these and some pre-made chicken and you can just leave that at work to make and eat as you please. It’s seriously the easiest thing out there! (I just happened to go to Trader Joe’s this week so that’s the chicken and bagged salad I had this week. But these are available everywhere! Taylor Farms salads are great and you can find the chicken strips in the deli meat section of any grocery store.)

Chicken Salad:

I love chicken salad, especially in the summer! It’s great on crackers, by its self, on top of a salad, on top of cucumbers, you name it! I have two ways of making it. When I’m in a real bind I’ll just use the canned chicken breast and add in a “whatever’s in the fridge” for a true 5 min prep meal (I shared how I made it on my IG story last week!) But if I’m doing it right I use my mom’s Chicken Salad recipe and make a big batch and will eat on it all week. Here’s the good stuff recipe:

  • 2 cups of Rotisserie Chicken (chopped)
  • 5 Hard Boiled Eggs (chopped)
  • 1/3 Cup of Chopped Celery
  • 1/4 Cup Cubed Pickles
  • 1/3 Cup Mayonnaise
  • Celery salt, salt & pepper to taste

Pesto Chicken Cucumber Sandwiches:

This is a GREAT low carb day option. I love pesto but it’s pretty high in fats so I make sure to eat as much as I can on low carb days. For this one I just take the chicken strips above and toss them in pesto. I cut up a full cucumber and hollow it out to make little boats and stuff em full of the pesto chicken. I love the cucumber gives it a little crunch! You could also use ham or turkey or whatever deli meats you have in the fridge.

Chili Lime Riced Cauliflower topped with Chicken & Cucumbers:

More chicken and more cucumbers. Maybe I am a little more boring with my lunch options than I thought! ha! I do really love cucumbers and chicken though! Riced cauliflower is definitely having a moment right now, but I love it! And I love the steamer bags that you just pop into the microwave to cook. It makes it so easy! You can just grab a steamer bag, some of your pre-made chicken, this yummy Chili Lime seasoning from Trader Joe’s and you’ve got the easiest meal ever! I also really love this seasoning over cucumbers! It’s a great addition of some greens to any meal but it’s also a great snack as well.
